FAQ

Equipment & Fryer Cleaning Questions

Common questions from Sydney head chefs and venue managers.
HygieneXperts cleans a wide range of commercial cooking equipment, including deep fryers, grills, griddles, stovetops, hotplates, commercial ovens, pizza ovens, salamanders, bain-maries, warming equipment and other suitable cooking appliances. The exact cleaning scope depends on the equipment type, condition, accessibility and manufacturer requirements. We confirm what is included before work begins so there is a clear distinction between cleaning and any mechanical, electrical or gas servicing.
Commercial fryer cleaning can include accessible internal fryer surfaces, baskets, lids, removable components, grease channels, exterior panels, handles, sides, legs and surrounding grease-affected areas. Depending on the fryer and agreed scope, we may remove loose food debris, grease, oil residue and carbonised deposits using appropriate scraping, degreasing and scrubbing methods. Oil removal, oil replacement and a fryer boil-out are only included where specifically agreed.
A commercial fryer is first assessed, cooled and appropriately prepared or isolated before cleaning begins. Depending on the fryer and agreed scope, the process may include removing oil, taking out suitable removable components, removing loose debris, carefully scraping carbon deposits, applying equipment-appropriate degreasers, scrubbing internal surfaces, rinsing or wiping as required, drying the fryer and detailing the exterior. Before-and-after photographs can also be taken to document the condition and completed work.
A fryer boil-out is a deep-cleaning process used on suitable commercial fryers to help loosen grease, carbon and food residue from the fryer vat. The fryer is emptied and a controlled cleaning solution is used according to the equipment manufacturer's instructions and site procedures. The exact process, product, temperature and duration depend on the fryer model. HygieneXperts only uses a boil-out where it is appropriate for the equipment and included in the agreed cleaning scope.
Yes. Heavy grease, burnt-on food and accessible carbonised deposits are a major focus of our commercial equipment-cleaning service. Depending on the equipment and surface, we may use appropriate scraping tools, brushes, scrubbing pads, commercial degreasers and carbon-removal products, sometimes over several cleaning stages. Results depend on the age of the deposit, equipment condition, surface material and safe cleaning limitations. Cleaning cannot always remove permanent staining, corrosion or damage to coatings.
Yes. Accessible internal surfaces can be included where the equipment design, manufacturer requirements and agreed cleaning scope allow. This may include oven cavities, doors, glass, racks, grill plates, grease trays, drip trays, fryer vats and suitable removable components. We do not dismantle electrical, gas or mechanical systems as part of routine cleaning, and specialist servicing or repairs should be completed by appropriately qualified technicians.
We use commercial cleaning products selected according to the equipment, surface and type of contamination being treated. Depending on the job, this may include commercial degreasers, fryer cleaners, oven and grill cleaners, carbon-removal products, detergents, stainless-steel cleaners and glass-cleaning products. Products are used according to their manufacturer directions, Safety Data Sheets and site requirements. We avoid describing every product simply as a “food-safe chemical”, because some products require rinsing or have specific restrictions around food-contact surfaces.
Used cooking oil can be managed as part of the service where this has been specifically agreed, but oil removal or replacement is not automatically included with every fryer clean. The customer's existing oil-storage, recycling or disposal arrangements need to be considered. Used cooking oil should not simply be discharged into sinks, floor drains or grease traps. Where customers also require oil replacement or ongoing oil management, this can be coordinated with HygieneXperts' separate Cooking Oil Change / Oil Management Service.
If our cleaners notice obvious physical damage while cleaning, we can bring it to the attention of the authorised site representative and record the observation where appropriate. This could include visible issues such as cracked components, damaged seals, corrosion, broken handles, loose parts or visibly damaged electrical cords. These observations are not a mechanical, electrical, gas or equipment-safety inspection. HygieneXperts does not certify equipment as safe to operate. Technical faults should be assessed by an appropriately qualified professional.
Commercial kitchen equipment cleaning is quoted according to the actual equipment and scope rather than using one standard price. Pricing may depend on: • type and number of appliances; • equipment size; • grease and carbon buildup; • internal and external cleaning requirements; • accessibility; • removable components; • fryer-oil handling requirements; • working hours; • site location; • site safety requirements; and • the overall condition of the equipment. Many straightforward jobs can initially be assessed from photographs. Larger or more complex kitchens may require a physical site inspection before the quotation is confirmed.
