FAQ

Cooking Oil Service Questions

What Sydney kitchens ask about handing over oil management.
A commercial fryer oil change service generally includes removing used cooking oil, preparing the fryer for refill and adding fresh oil where this forms part of the agreed scope. Depending on the service level booked, HygieneXperts may also include fryer cleaning, oil filtration, before-and-after photographs and a service report. The quotation should clearly identify whether the service is oil change only, filtration only, or a complete fryer service.
There is no single oil-change frequency that suits every commercial kitchen. The right interval depends on how often the fryer is used, the type of food being cooked, breading and crumb load, oil type, frying temperature, filtration practices, operating hours and the kitchen’s own quality standards. A high-volume takeaway or fried-food operation will usually need more frequent oil changes than a lower-volume venue.
Fryer oil may need changing when it no longer remains suitable for continued use based on its condition, performance or your kitchen’s operating standard. Common warning signs may include darker oil, a strong or unpleasant odour, excessive foaming or smoking, poor frying performance, burnt taste transfer, or heavy contamination with crumbs and residue. Filtration may help if the oil still has useful life remaining, but once the oil is genuinely degraded, replacement is usually the better option.
Fryer oil filtration is the process of removing suspended crumbs, food particles and sediment from cooking oil that is still suitable for continued use. Filtration can help improve oil cleanliness and may extend the usable life of the oil in some kitchens. However, it does not make degraded oil new again and does not reverse chemical breakdown. That is why oil filtration and oil replacement should be treated as related but different services.
No. Filtration and oil changing are not the same thing. Oil filtration cleans oil that is still suitable for use by removing suspended contamination. An oil change means the used oil is removed and replaced with fresh oil. If the oil has already deteriorated beyond acceptable use, filtration alone is not enough and a full oil change is usually the more appropriate solution.
Yes, fryer cleaning can be included where it forms part of the agreed scope. Depending on the fryer and service booked, this may include removing loose food particles, sludge, grease and accessible carbon residue before the fryer is refilled. Where appropriate and agreed, a deeper clean or manufacturer-permitted boil-out may also be carried out. The scope should clearly confirm whether the job includes oil change only, oil change plus fryer clean, or complete fryer cleaning and oil management.
Either arrangement can be discussed. Some customers prefer HygieneXperts to supply the fresh oil as part of the service, while others prefer to provide their own oil based on existing purchasing arrangements or brand preference. The quotation should clearly confirm whether fresh oil is included, what type of oil will be used, the approximate quantity where practical, and whether customer-supplied oil will be used.
Used fryer oil should be handled through the agreed storage, collection or recycling arrangement. It should not be poured into sinks, floor drains or grease traps. Depending on the agreed scope, the removed oil may be transferred into the customer’s approved storage container or managed through an agreed collection arrangement. If ongoing used-oil handling is required, this should be clearly discussed before the service begins.
Yes. Fryer oil servicing can often be scheduled before opening, after closing, overnight or during quieter periods, subject to availability and site requirements. After-hours servicing is often the preferred option because it reduces disruption to the kitchen and allows the fryer to be taken out of service more conveniently. The fryer still needs to be released by the site and prepared so it can be worked on safely.
Yes. Where included in the agreed service, HygieneXperts can provide a Fryer Oil Service Report or similar service record. This can document items such as the site serviced, date of service, fryer(s) attended, service performed, oil change or filtration completed, fryer cleaning completed, before-and-after photos where included, and relevant visible observations. These records can help support internal hygiene, maintenance and operational documentation, but they should not be described as a compliance certificate or food-safety certificate.
